How you take your snacks?? Here are some very interesting snack Ideas showed by Brittany. These snacks are summer inspired because they made by using seasonal food ingredients..
Recipes are:
1. Sweet and Spicy Mango Salsa
- 2-3 diced fresh mango’s
- 1 diced red bell pepper
- 1/4 cup diced red onion
- 1/2 -1 diced jalapeno pepper
- 1/2 cup chopped cilantro
- juice of 3-4 limes.
Combine in a bowl and eat alone, with your favorite chips or on top of chicken, fish or salad!
2. Garlic Edamame
- 1 tbs olive oil
- 4-6 cloves of chopped garlic
- 1/2 tsp red pepper flakes
- 1 tbs brown sugar
- 2 tbs low sodium soy sauce
Combine in pan on low/med heat for 3 minutes, then add bag of thawed edamame for a few minutes until warm.
3. Strawberry Banana Chia Drink
- 1 cup filtered water
- 2 cups organic apple juice
- 8 strawberries
- 1 banana
- Blend until smooth and add to 1/2 cup of chia seeds.
Stir thoroughly until all lumps are removed and put in fridge for several hours.
4. Turkey Roll Ups
- Nitrate free turkey meat or to furkey slices
- Cranberry chutney (you can find this in the jam isle)
- spinach
- red onion
- cucumber
- avocado
- spices of choice (salt, pepper, etc)
Place your chutney and veggies on the center of two turkey slices and roll up.You can cut these into bite size chunks or also wrap them in lettuce!
5. Frozen Greek Yogurt Bites
- 2 cups greek yogurt (I used plain but you can use flavored)
- 1/2 cups pitted and diced cherries
- 1 tsp vanilla extract
- Drizzle of honey to sweeten to taste
- 1/4 cup chopped nuts of choice (almond, hazelnuts, etc)
Stir to combine and then scoop into mini muffin pan or silicone mold and freeze. They pop right out of the silicone molds and with a pan you will have to use a butter knife to pop them out. You can also put popsicle sticks in these when partially frozen and eat these like popsicles!
